Banfi, in fact, was one of the seven companies that accepted the gamble of starting a production of quality Metodo Classico sparkling wines in Piedmont in the early 1990s, thus reclaiming the Piedmontese roots of the Italian sparkling wine sector. The project continued over the years. In 1997 the ‘Cuvée Aurora’ was born, precisely to evoke the idea of a new frontier, a new ‘dawn’ of quality Metodo Classico production in Piedmont.
